1 goose
10 potatoes, boiled and diced
1 c. onion
1/4 tsp. pepper
1/2 lb. ground salt pork
1 tsp. poultry seasoning
1 Tbsp. fat
1/2 c. celery
2 eggs, beaten
1 tsp. salt
4 slices bread (crumbs)
Clean and dry the goose. Salt
and pepper inside and out (1 to 1 1/4 teaspoons).
Mix all ingredients well and stuff into the
goose. Save the water the potatoes were cooked
in and use it to baste the goose. Really moist
when a turkey bag is used. Bake at 350 degrees
for 3 to 4 hours.
Sweet
'n' Sour Goose
1 goose
1 tablespoon sage
Salt and pepper
1/4 pound sliced bacon
1 large onion, chopped
1 oven cooking bag
1 cup apple juice
1 small can crushed pineapple
Yellow mustard to taste
Prepare goose. Preheat oven
at 375 degrees. Rub goose cavity with sage.
Sprinkle sage, salt and pepper over skin. Place
bacon over breast; secure with toothpicks. Stuff
cavity with onion. Place, breast side up, in
oven cooking bag. Place in large baking dish.
Add apple juice. Seal and slit bag according
to manufacturer's directions. Bake for 2 hours
or until tender. Place pineapple and mustard
in blender container. Process until smooth.
Serve over sliced goose. Makes 4 servings.
